Recipe Ingredients

  • Shallot or small onion 1 peeled and finely chopped
  • Garlic 1 clove. peeled and finely chopped
  • Root ginger 1 tbsp.
  • coarsely grated
  • Chopped coriander 4 tbsp
  • Ground cumin / tsp 
  • Ground coriander tsp
  • Ground cinnamon tsp
  • Mild chilli powder tsp
  • Ground cardamom a good pinch
  • Minced lamb 500g (1Ib 2oz)
  • Grape seed or sunflower oil 2 tbsp
  • Salt and freshly ground black pepper

Recipe Method

Mix the shallot or onion, garlic, ginger, herbs and spices in a large bowl. Add the lamb and scrunch it all together with your hands until ifs evenly mixed.

Divide the mixture into eight and lightly shape each portion into a round and flatten with your hand to make burgers about 8cm (34in) in diameter. Cover and chill for 30 minutes if you have time

Heat a large frying pan, lightly oil the burgers and season with salt and pepper. Cook the burgers for 2-3 minutes over a medium heat, pressing them down lightly in the pan with a spatula.Turn them over and cook for another 2-3 minutes or 5 minutes if you prefer more well done burgers.

Serve the burgers on slices of bread with onion slices, lots of salad and a sweet chilli sauce.

Cook's Tips

If you can. make the burgers the day before you intend to cook them because then the spices have more time to blend into the meat. Double wrap them in cling film to prevent the garlic and spice infiltrating the more sensitive dairy items in your fridge!
